Healthy recipe: Italian caprese avocado toast

Schmearing avocado on toast and topping it with traditional caprese salad ingredients makes for a quick, healthy start to the day.


  • 1 medium avocado, peeled and pitted
  • 1/4 cup fresh medium basil leaves, finely sliced, plus more for garnish if desired
  • 1/8 teaspoon pepper
  • 4 slices whole-grain or whole-wheat bread, toasted
  • 1 pint cherry tomatoes, halved
  • 1/4 cup shredded fat-free mozzarella cheese
  • 2 teaspoons balsamic vinegar


  1. In a small bowl, using a fork, mash together the avocado, 1/4 cup basil, and pepper.
  2. Spread the avocado mixture over the toasted bread slices. Place the tomatoes cut side down on the avocado mixture. (Use as many as fit. Keep the extras for a future use.)
  3. Sprinkle 1 tablespoon mozzarella over the tomatoes on each slice. Drizzle 1/2 teaspoon vinegar over the mozzarella on each slice.
  4. Garnish with the remaining basil leaves.
