Free February cooking class: Italian minestrone soup and homemade crackers

On a cold February evening, a warm bowl of soup is exactly what you need to warm up. And when it’s a nutritious soup, it may be exactly what your body needs to stay healthy.

This month, you can join Providence and our partner, Homemade, to learn how to make Italian minestrone soup — plus some delicious crackers. In these free, online cooking classes, we’ll give you all the ingredients and instructions you need for a healthy, flavorful dinner.

“Minestrone soup is a classic Italian soup that can be made with a wide variety of vegetables, beans and herbs,” says Megann Karch, a registered dietitian nutritionist and clinical dietitian with Providence Swedish. “This particular green minestrone includes multiple dark green vegetables that are very nutrient dense and a great source of fiber, folate and vitamin K. The recommendation for most people is to eat about 2.5 cups of vegetables each day, and this soup is full of them, making it easy to reach that goal.”

This recipe also features farro, an ancient grain, in place of pasta noodles. Farro has a nutty flavor and is high in both protein and fiber. Like some crunch in your soup? Be sure to make the easy homemade crackers flavored with rosemary and Parmesan, the perfect companion to your meal.

With 15 minutes of prep time and just 15 minutes of cooking time, you’ll have a delicious dinner quickly. The recipe makes 4 to 6 servings, so the whole family can enjoy your new skills in the kitchen.

They’ll even teach you to make pistou, a delicious fresh sauce that gives the soup amazing flavor. Since it’s a live class, you can ask any questions you need to as you go. And if you can’t make it to the live class, you can still watch the video on-demand when it works for your schedule.

Karch will also be available during the class to answer nutrition and dietary questions and to help explain the benefits of these recipes.
