Hummus
Ingredients
• 16 oz (1 lb) chickpeas
• ½ cup tahini
• ¼ cup freshly squeezed lemon juice
• 1 tbsp extra virgin olive oil (for garnish)
• 1 clove garlic minced
• 1 tsp pepper
• 1 tsp lemon zest
• 1 tsp paprika (optional for added flavor)
Instructions
1. For less cooking time soak chickpeas in water overnight.
2. Boil the chickpeas in water to soften and then cool.
3. Next, add chickpeas to the food processor and blend.
4. Add in the tahini, garlic, lemon juice, lemon zest, black pepper, paprika
(optional) to the chickpea liquid and blend for another 1-2 minutes. Add a
couple of ice cubes for smooth result. May add in water small amount at a
time until hummus smooth.
5. Optional, add olive oil as garnish.
