Summer Salad

Ingredients
• 4 large tomatoes, cut into chunks
• 4 Persian cucumbers with skin cut into chunks
• ¼ red or white onion, thinly sliced
• 1 Anaheim pepper, thinly sliced
• ¼ cup chopped cilantro
• 2 tbsp chopped dill
• 2 tbsp apple cider vinegar
• 2 tbsp extra virgin olive oil
• 1 lemon
• Pinch of ground black pepper
• Optional: Pinch of sumac
Instructions
• In a large bowl, mix the tomatoes, cucumbers,
and onions. Add Anaheim pepper, cilantro, and
dill.
• Drizzle the vinegar, squeeze lemon, and oil over
the salad and season with pepper and sumac for
flavor. Mix the salad together.
