15 Braised Trout Ingredients • 1 whole trout cleaned and scaled • ¼ yellow onion, sliced • 2 allspice berries • 1 bay leaves • ¼ tsp ground black pepper • ¼ cayenne pepper • Handful of flat-leaf parsley sprigs • ¼ cup water • Lemon wedges, for serving Instructions 1. In a Dutch oven, layer the sliced onions, allspice berries, bay leaves, black pepper, cayenne pepper, and parsley. Place the trout on top and pour in enough water to cover the fish. 2. Cover with a lid and set over medium-low heat. Bring the water to gentle simmer. 3. Braise the trout for 25-30 minutes or until fully cooked. Once done, transfer the trout to a serving platter, spoon some of the cooking juices over the top and serve with lemon wedges. Per serving: ½ trout; Calories: 130; Fat: 6 gm; Saturated Fat:1 gm; Sodium: 46 gm; Carbohydrates: 2 gm; Protein: 20 gm
