Lentil Soup
Ingredients
• 3 tbsp olive oil
• 2 cups of brown lentil
• 1 large onion, chopped
• 4 cloves of garlic
• 8 cups of water
• 3 tbsp of dried mint
• 2 tbsp scallions
• 1 tsp black pepper
• ¼ tsp cayenne pepper
• Garnish (optional):
• Fresh mint
• Aleppo pepper
• Olive oil
Instructions
1. Add olive oil to warm pot then add onions and caramelize.
2. Wash lentils in large bowl under running water and then add lentils to pot with
onions and stir.
3. Add water and bring it to boil. Lower the heat and simmer for 45 min.
4. Smash garlic cloves and add to pot. Add dry mint and scallions and cook for another
20 minutes. Add black pepper and cayenne pepper for flavor.
5. Serve in a bowl and garnish with fresh mint and Aleppo pepper (optional) with a
drizzle of olive oil.
