8 Cucumber Yogurt Salad with Walnuts and Dill Ingredients • 4 cups Low-Fat Plain Greek Yogurt • 4 Persian cucumber (finely diced, peeled or with skin) • ½ cup walnuts (chopped) • ¼ cup fresh dill (chopped) • ¼ cup fresh mint (chopped) • 2 tsp finely minced garlic • Pinch of pepper to taste • Optional Toppings: o Raisins o Olive oil o Lime juice o Dried mint Instructions 1. Whisk together the yogurt, garlic, dill, mint, and pepper. 2. Add the cucumber, walnuts, and stir well. 3. For garnish and additional toppings may add more walnuts, raisins, splash of lime juice, swirl in olive oil and sprinkle dried mint. Per serving: 1 cup; Calories: 230; Fat: 10 gm; Saturated Fat: 3 g; Sodium: 76 mg; Carbohydrates: 24 gm; Protein: 20 gm
