Salad Ingredients
2 cups uncooked whole
wheat orzo
1 can (15.5 oz) black
beans, rinsed and
drained
8 oz frozen corn
(or 2 ears of grilled corn,
removed from ear)
2 bell peppers (red and
orange), halved,
deseeded, grilled,
and chopped
Sea salt and black
pepper to taste
Dressing Ingredients
3 cups cilantro leaves
4 T fresh lime juice
2 T olive oil
4 T pine nuts
2 cloves garlic, minced
Cooking Instructions
1. Cook orzo according
to packaging.
2. In food processor,
purée pesto ingredients.
Toss pesto with cooked
orzo and remaining
ingredients.
3. Other vegetables such
as onions, asparagus and
tomatoes go wonderfully
with this recipe,
experiment to find what
you enjoy best!
